Keto*-Friendly Peanut Butter Cookies

Ingredients

  • 1 cup no-sugar-added creamy peanut butter spread
  • 1/2 cup granular sugar replacement made with erythritol
  • 1 teaspoon baking soda
  • 1 egg
  • 2 tablespoons chia seed
  • 2 tablespoons no-sugar-added, stevia-sweetened dark chocolate baking chips
  • 2 tablespoons chopped cocktail peanuts

Steps

  1. Heat oven to 350°F. Line cookie sheets with cooking parchment paper. In medium bowl, stir peanut butter, sugar replacement, baking soda and egg until blended. Stir in chia seed, baking chips and peanuts.

  2. Shape into 22 (1 1/4-inch) balls. On lined cookie sheets, place balls 2 inches apart. While gently holding ball, carefully flatten each in crisscross pattern with fork.

  3. Bake 8 to 10 minutes or until edges are set. Cool completely on cookie sheets, about 30 minutes. Remove from cookie sheets to cooling rack. Store covered in airtight container.

Tips

Tip 1: It may be hard to find a no added sugar peanut butter that requires no stirring, but believe us, it’s out there! Even popular brands, like JIF, have added these to their line up. If you can’t find it readily available at your market, you can use your go-to peanut butter. Just be sure it’s thoroughly mixed. Toss it in your stand-mixer (if you have one) to create the spreadable consistency you need for this recipe.

Tip 2: This cookie without the chocolate chips added is naturally vegan. While there are vegan chocolate chips out there, they typically aren’t sugar free. For those who are vegan and want a chocolate fix in this mix, be sure to adjust your macros as needed based on the chocolate you use.

Tip 3:  Prefer almonds over peanuts? Swap out the peanut butter with a no added sugar almond butter (thoroughly mixed) and chopped roasted almonds in place of the cocktails peanuts. Swapping your favorite keto*-friendly treats has never tasted so good!
